Crock Pot Cheesy Sausage Corn Chowder

 When the temperatures turn chilly,
and you have to retrieve your 
hoodies
jeans
slippers
and scarves to stay warm in the house,
that means it's time for soup.
 Johnie and I were raised in the same generation era.
We were raised on soup.
Soup was always a comfort food for us.
When I make soups I go
recipeless
non-recipe
eyes closed
all in with no recipe to aid me.
Johnie loved this soup!
It is for sure a rib-sticking,
warming the soul
kind of soup.

To thicken this soup I made a rue.
Is it illegal to add a rue to soup?
I hope not because I did it.
Please don't call the "using rue wrong" police.
It was wonderful!
And making it in the crock pot.....
sure does save time,
makes the house smell wonderful,
and frees you up for other responsibilities.
This is what I did:

Crock Pot Cheesy Corn Chowder

4 c. hot water
3 TBS chicken soup base
3 red potatoes, chopped small
6 breakfast sausage patties (crumbled with fingers and browned in skillet)
4 green onions, sliced thin, including green tops (threw these in when browning sausage)
2 c. frozen corn
salt and pepper to taste (I did not salt)
A couple shakes of white pepper

Add all the ingredients to crock pot. Cook on high for 4 hours.

Rue:
3 TBS butter
1/4 c. flour
pepper
2 c. milk
1/2 c. shredded cheese (I used the Mexican blend)

Melt butter on med/high in skillet. Add flour, pepper, and whisk. Slowly add milk while whisking. Once the rue is thickened add the cheese. Let cheese melt and then add to the crock pot ingredients.
Turn crock pot to low for one more hour.
Serve in soup bowls and top with fresh sliced green onion.

Crock Pot Roasted Chicken Legs

I am sharing this recipe at The Weekend Pot Luck.
Lots of great recipes there.

 Me and crock pots usually battle when it comes to preparing food.
My thoughts on the crock pot are:
mushy food
over-cooked
waste of time
I can cook my meals quicker

Why do I doubt the crock pot so bad?
The only bad thing that I deal with in a crock pot is pasta.
I never have luck with pasta dishes when they are prepared
by the crock pot.

When I ran across this roasted chicken recipe at The Midnight Baker 
I had my doubts.
There is no way a crock pot, slow cooker can roast chicken.
So,
I did what any normal food blogger would do
and put the crock pot to the challenge.
You are going to fail again my enemy friend.......
But guess who ended up being the fool?
Yup,
ME!!
I will for sure make this again and again.
Plus.....
 I used some the best creole seasoning you can find.
Tony's is the best there is.
Tip * Creole seasoning is spicy.
If you feel you need to cut back on the amount you can.
 All you do is mix together
1/2 c. brown sugar
2 TBS creole seasoning
I rolled and squeezed the seasonings onto 5 chicken legs.
 They are supposed to lay flat in the bottom of a slow cooker.
I had to use two cookers because my crock pots are old antique out dated.
I don't have one of the fancy smancy oval ones with the removable crock.....

If you read this?
I would really like a fancy smancy crock pot.

But anyway....
Cook the chicken legs on high for 4-5 hours,
or until the juices run clear.
I did not let mine go past 5 hours.
Actually mine was more like 4 1/2 hours.
To serve with the roasted chicken legs, 
which is very good by the way, and roasted red potatoes.
If you are not a Schwan's customer you might want to look
into becoming one. 
They have a lot of great food.

Three Envelope Roast

 Our first blog post!!
Johnie was kind of left out of this one, 
but that's okay.
He had dinner waiting for him when he got home from work.
Nothing to complain about there, huh?
Although, he did participate in gathering groceries.

This was a very easy crock pot dish.
Three envelopes of seasonings, and wha-la a tasty roast was born.
 I had to share this....
This is just one, of many, of the little things that Johnie does.
He brings me tiny little flowers when he returns from work.
And it's always, "I love you", with a kiss.
I had to capture this one.
It is one of my favorite looking flowers.
It resembles the sunflower, don't you think?
 This is the roast that came out of the crock pot.
I was kind of worried about it being too salty with all those 
seasonings thrown in. 
But it turned out perfect! 
Along with the roast we had
parsley red potatoes, and
California blend veggies.
Perfect meal!!

Wait until you see what we are having tomorrow. 
The leftover queen is going to work her magic......

Three Envelope Roast

1 envelope Italian salad dressing mix
1 envelope Ranch salad dressing mix
1 envelope Brown Gravy mix
2 c. water
1 Beef roast

Measure out 2 c. water in a large measuring bowl. Add the envelopes of seasonings. Whisk together and pour over roast that is already placed in the crock pot. Cook on low for 8 hours.
